Hey cool! Ya, just started my "tap line" a week ago. It's been a cool week so not much action yet. I found it takes about 5 gallons of sap to make a pint of syrup so yes you need to tap more trees. I have 13 trees on tap right now. The results are worth it though I can't imagine doing it commercially!
Had one of those but it broke!

Sap is running strong here now! 20 gallons on the boil! Got it down to one pot now and expect 5 pints in the end.

Commercially, could be 24hrs one day and 1 hr the next. Couldn't believe how much trees differ in production or how much the weather affected the run. We finished up on Sunday with 5 small jars. Next winter, I'll rig up an old wood stove to hopefully speed up the process.

problem with syrup is the evaporation process
my buddy does it and it seems about 1;1 ratio
1 gallon sap : 1 gallon beer
I do like the old fashioned way on wood fired pan just a hint of smoke and a little thicker than the store stuff yum
only to ways I like to drink !!
By myself or with somebody!!

I have no idea what all effects production or why. This is only the second year we have tried it and the trees I think should produce well don't always and the same with the weather. I'm not even sure when the season starts and when it finishes.
So much to learn!!

You know , I hear guys all the time say "I don't know what I would do if I were to retire." My gosh! The world is your oyster buddy! What a lack of ambition and imagination! Sure it takes money to do things but there is so much to learn and do that can be done very reasonably - like this for instance!
Here is the results of 20 gallons of sap. It is a wee bit thin as I am not good at judging how much to boil it. I start to get nervous when it gets that toffee like sheen on the top, I would hate to have to chip it out of the jar with a screwdriver! Again!![]()
